- Heat olive oil over medium heat in a saute pan.
- Add diced sweet potato and cook until soft (10-15 minutes). Add onion and cook for an additional 3 minutes
- In a large bowl whisk together the eggs, milk, torn baby spinach and salt and pepper.
- Turn heat to low and add egg mixture to saute pan. Crumble goat cheese on top and cover. Cook for 15-20 minutes.
- Let Frittata cool for a few minutes. Slice and top with cilantro and sri racha.
