- Wash and cut vegetables. Boil vegetable broth in a soup pan.
- Set rice aside in bowl with water and allow to soak for 20 minutes.
- Add oil to medium sauté pan and heat over med-high heat.
- Add in garlic and sauté until brown (about 1-2 minutes).
- Add in onions and ginger and continue sautéing.
- Salt and pepper to taste.
- Continue sautéing and add in spices. Once it starts to appear dry, add in water to cook spices further.
- Add in cauliflower, carrots, peas and allow to cook for 10 more minutes stirring frequently.
- Once vegetables are cooked through, add in rice and stir fry until rice starts to brown up a bit.
- Add in tomatoes, potatoes, green peppers and stir.
- Add in heated vegetable broth and cook on high heat until the broth dries up a bit.
- Lower heat then cover and cook until the rice is fully done.
